Title: Grilled Salmon with Lime Mayo

Yield: 1 Servings

  Lime mayo:
1cMayonnaise
  Juice of 1 lime
1tsZest
1tsWorcestershire sauce
  Salt and freshly ground
  Pepper
4 Salmon steaks
1/4cMelted butter
2tsDill
  Salt and black pepper
  Minced fresh parsley

Lime mayo: Combine mayo, lime juice, zest, Worcestershire, salt and pepper. Mix well. Chill until ready to use. Salmon: Preheat grill. Brush salmon with butter on each side. Sprinkle with dill on each side. Season with salt and pepper to taste. On an oiled rack about 4Ó from heat, grill salmon until top side is lightly browned. Turn over. Baste with butter and cook until fish flakes easily at the touch of a fork. Total time will be about 10 minutes to cook both sides! To serve: Place fish on plates, top with some mayo, fresh dill and parsley.

Approximately 8-12 minutes.
